For 2026 the vote wasn’t close: industry trackers have pistachio up over 300% year-over-year, the “defining luxury flavor” of the year per the trend outlooks — a wave the viral Dubai chocolate bar turned into a flood.
Here’s our confession: we didn’t chase this trend. The pistachio lineup was already on the board. Sometimes the wave comes to you.
Why pistachio, why now
Trend analysts point at two forces: the Dubai chocolate effect (pistachio-tahini cream inside crunchy chocolate — two years viral and still going), and the 2026 preference for layered premium flavors — familiar base, unexpected finish. Pistachio delivers both: nostalgic like a nut, luxurious like a dessert cart, green enough to look intentional on camera.
And unlike most viral flavors, the nut underneath is genuinely good for you — protein, fiber, healthy fats. The trend has better bones than most.
