Let’s give credit where due: Chipotle taught America the assembly line — pick a base, stack it, watch it happen. The format is genuinely great. What Miami’s gym crowd kept asking for was that format with sharper numbers: more protein options, transparent topping math, and fish that isn’t a limited-time event.

How the build works here

Four steps at the You Build It line: base (wrap with your tortilla, or bowl Small/Large +$2) → toppings (five or six, included) → protein (chicken $10.99, skirt steak $14.99, ground turkey, shrimp, salmon, tofu, tuna or all-veggie) → dressing (included; extras like avocado, guacamole or fresh burrata run $1–$1.99, extra protein $3.99).

The internet’s answer to “healthy Chipotle” is a hundred copycat recipes — WellPlated’s is genuinely good — but meal-prepping cilantro rice on a Tuesday is a hobby, not lunch. This is the buy-it version with the same logic.

And yes, there’s a burrito

Missing the foil-wrapped handful?
